Au Gratin Potatoes

  • 4 Russet potatoes, peeled and sliced
  • 1 1/2 cups half-and-half or milk
  • 1/2 cup cheddar cheese, plus extra for garnish
  • 1/4 cup flour
  • Neutral oil
  • 2 garlic cloves, minced
  • Salt and freshly ground black pepper
  • 2 green onions, chopped or 1/4 cup fresh rosemary sprigs

Preheat oven to 400°. In a measuring cup or small bowl, combine halfand-half, cheese, and flour, mixing until smooth. In another bowl, combine garlic and green onions or rosemary.

Brush baking dish with oil, then arrange half the sliced potatoes along the bottom. Sprinkle with half the garlic-herb mixture and season with salt and pepper. Add the rest of the potatoes, then cover with remaining garlic-herb mixture. Pour cheese sauce over the potatoes and season with salt and pepper. Bake for 1 hour, then sprinkle with additional cheddar cheese and bake for an additional 10 minutes or until cheese is bubbling. Serve hot.
