Baba Ganoush

  • 1 eggplant, halved
  • 1/4 onion
  • 1 garlic clove
  • 1/4 cup olive oil
  • 1 tbsp sesame paste
  • Salt and freshly ground black pepper

Preheat oven to 350°. Roast eggplant for 45 minutes, then cool slightly and peel away skin. Place in a blender with onion, garlic, olive oil, sesame paste, salt, and pepper. Purée until smooth, then store in a bowl or jar.
