Cucumber Soup

  • 2 potatoes, diced
  • 2 English or 6 Kirby cucumbers, chopped
  • 1/2 tsp thyme
  • 2 bunches green onions, chopped
  • 3 cups chicken stock or 3 cups water and 1 tbsp chicken-flavored Better than Bouillon
  • 1 tsp salt
  • 1/2 tsp thyme
  • 1/4 tsp pepper

Place all ingredients in 5 qt saucepan and boil until potatoes are tender. Blend using an immersion blender, then pour contents into a soup tureen. Serve warm or cold.
