Gazpacho

  • 2 slices dry bread
  • 2 cups water
  • 4 large ripe tomatoes
  • 1 bell pepper
  • 1/2 cucumber, roughly chopped
  • 1/2 onion, roughly chopped
  • 2 garlic cloves
  • 4 tbsp olive oil
  • 2 tsp salt
  • 1/4 tsp cumin
  • 5 tbsp vinegar

After removing the crusts, soak bread in water for 15 minutes.

In a blender, purée tomatoes, pepper, cucumber, and onion. Pour into tureen or other serving bowl.

Squeeze excess water from bread and place into blender. With the motor running, slowly pour in olive oil to combine. Add garlic, salt, cumin, and vinegar. Pour over puréed vegetables and serve.
