Grandma Gopsill's Pickles

  • 3 cucumbers
  • 1 onion
  • 1 cup cider vinegar
  • 1 cup water
  • 3 tbsp salt

Peel and slice the cucumbers into long wedges. Slice the onions into thin crescents. Pack cucumber and onion into canning jar(s).

Mix vinegar, water, and salt together well at room temperature. over cucumbers, fully submerging them. Seal and allow to stand at least overnight before tasting.
