Grilled Vegetable Sandwich

  • 4 thickly sliced pieces of bread
  • 2 tbsp olive oil
  • 1 portobello mushroom, sliced
  • 1 zucchini, sliced
  • 1 onion, sliced
  • 1 tomato, sliced
  • 2 handfuls arugula
  • Baba ganoush
  • 1/2 avocado, sliced

Heat oil in a pan over medium heat. Sauté mushroom, zucchini, and onion until cooked through and caramelized.

In the meantime, toast bread and slice tomato and avocado. Smear bread with baba ganoush, then pile cooked and raw veggies on top with one handful of arugula each.
