Koulourakia Greek Butter Cookies

  • 2 cups butter
  • 2 cups sugar
  • 6 eggs
  • 1 tsp vanilla extract
  • 8–9 cups flour, sifted
  • 2 tbsp baking powder
  • 1 egg, beaten with 1 tbsp water

Preheat oven to 375°. Cream butter and gradually beat in sugar. Beat eggs until light; add to butter mixture and beat throughly. Add vanilla. Sift together flour and baking powder. Carefully blend into butter-egg mixture to create a soft dough and knead gently. Shape with lightlyfloured hands into desired shapes and arrange onto cookie sheets. Brush with egg wash and bake for 20 minutes or until cookies are golden brown.
