Sausage and Wild Rice Stuffing

  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 1 carrot, peeled and chopped
  • 1 lb sausage, casings removed
  • 1 1/2 cups short or medium-grain rice
  • 1/2 cup wild rice
  • 3 cups chicken broth

Heat a small amount of olive oil in a wide skillet. Sauté onion, celery, and carrot, cooking until softened and golden. Add sausage, cooking until well browned. Add rice, stirring to combine and coat with olive oil. Add broth and simmer over low heat until most of the water is absorbed.

Stuff into turkey and bake, 20 minutes per pound at 350°. If bird is big, cover pan with brown bag during entire cook time.
